Gluten-Free Granola
It’s difficult to find a healthy granola option on store shelves. It’s usualy full of inflammatory canola oil, sugar, and low quality oats. So, I created this recipe to satisfy my craving for a healthy and satisfying crunch. Once you try homemade granola, you won’t go back to store-bought.
Prep Time: 10 minutes
Total Time: 1 hour 10 minutes
Ingredients
1/2 cup maple syrup
2 teaspoons vanilla extract
1/2 cup coconut sugar
1 teaspoon salt
1 teaspoon cinnamon
1/4 cup ground flaxseed*
1 cup raisins
Directions
Preheat oven to 250 F
In a large mixing bowl, mix olive oil, maple syrup, and vanilla extract together until completely blended
Add the salt, cinnamon, ground flaxseed, and oats and mix until everything is evenly incorporated
Pour onto a large cookie sheet and use a spatula to spread evenly
Bake for 1 hour (flipping the mixture at 30 minutes)
After baking, sprinkle raisins on top
When cool, transfer to container and seal
Store in pantry and use within 1 week for best taste
*flaxseed is included because it is a rich source of omega-3 fatty acids. To obtain the maximum nutritional benefits from flaxseed, it is best to buy it whole and use a coffee or spice grinder to make ground flaxseed yourself. It is more difficult to digest the whole flaxseed due to it’s tough outer shell.
